It. Is. Officially. Fall.
Hallelujah!
You heard it ladies and gentlemen: sweaters, pumpkins, and gorgeous leaves are just around the corner! Naturally, I found this to be a cause for celebration. And do you know what every celebration needs? Dessert.
So combining a few of my many loves for autumn, mugs, cinnamon, and fruit, I created a recipe for a single serving apple crisp that can be made in 2 quick minutes. And it can even be considered "healthy"! Actually, I'm not sure how accurate that statement is, but it sure does sound nice, doesn't it? Read on for the recipe!
2 Minute Apple Crisp
- 1 medium to large apple, any variety
- 1/2 tsp of cinnamon
- 1/8 cup of steel cut oats (or granola if you prefer a crispier apple crisp!)
- A drizzle of honey/agave
- Optional ingredients: 1/4 tsp of orange zest, 1 and a 1/2 tbsp of crasins/cranberries, and/or 1-2 scoops of your favorite ice cream!
- I found it works best to wedge your apple first, then chop each wedge into three to four sections, as shown in the picture above.
- After chopping your apple, put all of the small sections into your favorite mug (as you can see in the photo below, I chose a red and white Starbucks mug that I talked about in a previous blog post, "Mug Me")!
- Dump the oats/granola, the cinnamon, and lightly drizzle the honey/agave into your mug of choice (if you choose to add in cranberries or orange zest, do so at this time).
- Mix all of the ingredients together in the mug with either your fingers, a fork, or a spoon until the apples are well coated in the sticky, oat-y, cinnamon-y goodness!
- Just stick it in there and press the "2", "0", and "0" buttons. Not much information I can give you for this step. If you can't work the microwave, I would recommend one of those "For Dummies" books.
- If you hear weird hissing sounds during this step, do not panic. The moisture is just being released from the apples and letting off steam as a result.
- Obviously, you should let your mug apple crisp cool down a little bit first before sticking it into your mouth. Because that would hurt. Badly.
- This recipe is best served with a scoop of ice cream on top. Actually, isn't that the case with most foods?
- This really is delicious. If you used the granola instead of the oats, then yours will be crispier. I just didn't know how crispy you like your crisps.
- See? This is kind of healthy. It's just an apple and some oats. People have oatmeal with fruit on top for breakfast. It's practically the same thing. Health food. Just ignore the part where I said to smother the treat with ice cream.
- Now.... eat dat bad boy!
I think it is just perfect for a fall snack or dessert. It's warm and spiced and apple-filled. I can't wait to go apple picking this fall, and I know exactly what I'll be doing with a few of those apples!
The best part is that there are a few variations that I came up with, so if you get bored, you can change it up a bit. Simply by adding orange zest, and/or cranberries/craisins, you get a whole different (but equally good) taste. Mmmmm. My mouth is watering just thinking about it!
